Tamales colorados y negros

In Guatemala we eat tamales (sweet or salty) at any time of the year, but in December we eat them more often. In some homes, the traditional Christmas dinner is red tamales. Made with corn dough, meat (chicken, pork or chompipe), capers, olives, chili pepper or spicy peppers, a dried plum and red sauce. It is wrapped in maxán leaf – that gives a particular flavor to it – and it is cooked in a ceramic pot on a wood fire. The black tamales are sweet, the only difference between them and the red tamales is the sauce. Usually as chapines we eat a red tamale and then a black one (for dessert).
