Paches are traditional to Quetzaltenango and that is why the main ingredient is potatoes, which are produced in the nearby municipalities. The paches are similar to tamales, with the only exception being the dough, which in the tamales is corn and in the paches it is potato. The popular custom is to make and eat them on Thursdays “paches Thursday”, but in the Christmas season the consumption of these is greater. So in the “posaditas navideñas” it is common to be served a delicious pache.
