Kak’ik de Chompipe

The Kak’ik is an original recipe of Alta Verapaz and is known as the red broth of chompipe; and in 2007 it was declared an Intangible Cultural Heritage. Some chapines have adopted the Kak’ik as a traditional dish for December 25th, since on the 24th some eat turkey or chompipe (patio turkey) for Christmas dinner – and then on 25 Kak’ik with what is left of chompipe from the previous day. It is accompanied with rice and white tamalitos.
