The chile relleno (literally “stuffed chile“) consists of a stuffed, roasted, fresh pepper, sometimes substituted with another kind of chile, a pasilla chile or even jalapeño chili pepper. In Guatemala, the ‘pimiento’ pepper is stuffed with shredded pork and vegetables. It is covered with egg batter and fried. It is served with tomato sauce or inside a bread bun with some avocado.
