Piloyada Antigüeña

This traditional dish consists mainly of large beans – known as piloyes – and it’s served as somewhat of a fresh, cold salad. Two kinds of sausages, pork, chicken and other meats. To season the beans, a mixture of vinegar, tomato, onion, coriander, thyme, salt and pepper is added.
